Week One - Apricot Drop

A Sober October special
With Sprigster, Apricot, Fennel, Bay and Soda

A long refreshing and fruity aperitif style cocktail. The bold, juiciness of the apricot, the subtle spiced notes of the fennel and bay, and the anise flavours, pair beautifully with the Sprigster, making a simple yet refined cocktail.
INGREDIENTS
50ml Sprigster
30ml Apricot, Fennel & Bay Cordial *1
150ml soda water to top
METHOD
Add ice to the glass, followed by the Sprigster and apricot cordial, stir briefly and then top with soda. Stir again to incorporate.
TO MAKE THE CORDIAL
Cordial Recipe No.1 - Apricot, Fennel & Bay Cordial
500g Fresh and ripe apricots (or dried apricots), stones removed and cut into quarters
250g Water
125g Sugar
½ Tablespoon Fennel Seeds
3-4 Bay Leaves
Method: Toast the fennel seeds in a saucepan for 2-3 minutes, add the apricots, water and sugar and bring to a boil, add the bay leaves and reduce the heat right down and let simmer for 40 minutes or until the fruit is tender and fibrous. Remove from heat and let cool. Strain out solids through a chinos and bottle. Will keep in the fridge for 2 weeks.
