Week Two - Green Garden Sour

A Sober October Special

With Sprigster, Basil, Lemon, Honey, Apple, Sunflower Seed Orgeat and Cucumber Bitters

Inspired by the different areas of the garden. A more savoury drink, nutty and herbaceous, a really complex and refreshing sour style cocktail with a beautiful foam. The pepper adds a wonderful aromatic note on the nose.
INGREDIENTS

50ml Sprigster
20ml Apple Juice 
10-12 Basil Leaves 
15ml Lemon Juice
2 tspn Honey
5ml Sunflower Seed Orgeat (Recipe below) 
2 Dashes Cucumber Bitters
1 Egg white
Soda top

METHOD

In a shaker muddle the basil with the honey and lemon. Add the Sprigster, apple juice, sunflower, bitters and egg white (or vegan alternative). Dry shake (without ice) and then add ice and shake again. Double strain into a rocks glass with ice, top with a splash of soda. Garnish with cucumber ribbon and cracked black pepper.

TO MAKE THE ORGEAT
Cordial Recipe No.2 - Sunflower Seed Orgeat
450g Hot water
200g Sunflower seeds, unsalted and toasted
200g sugar
1⁄2 teaspoon orange blossom water
Method: coarsely blend together all ingredients, let rest until cool. Put a sieve on top of a bowl, lined with a cheesecloth/muslin, pour the mixture on to the cloth and let all the liquid drip through into the bowl overnight. In the morning ring the cloth tightly to squeeze out any remaining liquid and discard the solids. Store in a bottle and keep refrigerated for up to a month.
